More about this wine from Balnot-sur-Laignes, Aube Champagne Region, France
Before we dive in, a tutorial: east of Paris is the Champagne region where Champagne — the bubbly French wine you clutch in one hand stumbling through your wedding toast — is allowed to be made. And almost 100% of the time, it’s made of three grapes: Chardonnay, Pinot Noir, and Pinot Meunier. (Phew, one less confusing wine factoid to worry about!)

The Fontaine estate that produces this party in a bottle sits on a ridiculously bucolic hillside vineyard in the famously under-the-radar, Aube. Here, Salomé Fontaine and her husband carry on her family’s centuries-old tradition of handcrafting small batches of exquisite (and affordable) Champagne.
How to drink it

While...

Pull out the fancy wood cutting board with an array of gooey and soft French cheese like Camembert, Bleu d'Auvergne, and Brie.
