And to make a true Chianti, you must first use the most favored grape of Italy, Sangiovese, about 80 percent. Then add to it small quantities of lesser-known varietals. In the case of this yummy Pagano, Canaiolo and Ciliegiolo. So for your hearty, red-sauced pasta, this bottle is the perfect accompaniment — and it tastes just as good while you’re cooking up said dish. And, not for nothing, it’s a superb value. So you never have to feel guilty serving up more than one bottle.
