Perdeberg Wines, living quietly at the foothills of South Africa’s Paardeberg Mountains since 1941, adopted its name from the local Mountain Zebra, mistaken for wild horses “paard” by the Dutch settlers. But because of their microclimates and innovative wine techniques (they use aerial infrared photography to pre-protect their land), there is no mistaking the quality of their wines. Especially their Classic Collection, made in an elegant but fruity New World style like this bottle of Cabernet Sauvignon. It goes great with all sorts of meats but also hits the right spot when sipped on its own.
