But take this drought-resistant varietal that grows best in dry climates, like a vineyard nestled in the mountain shadows of Paardeberg Mountain in Paarl, South Africa — and now that Cinsault becomes the star of its own show. Known locally as Hermitage, this red is punchy and as floral as it is fruity. Served best with a bit of a chill.
