If you’re looking for a wine made in the traditional Veronese manner that dates back centuries to the Roman times, then you’re in luck. The Corvina, Corvinone, Rondinella, Rossignola, Oseleta, Negrara, and Dindarella grapes in this Cimbrone, grown around the Moraine Hills in the heart of Valpolicella and Venetian areas, were raisin-dried — meaning they were partially dehydrated before being pressed into wine. This old timey but effective method allows for the evaporation of water which concentrates the sugar and flavors. And the result is a super tasty red wine of velvety weightiness and character. Enjoy!
