Before we dive in, a tutorial: east of Paris is the Champagne region where Champagne — the bubbly French wine you clutch in one hand stumbling through your wedding toast — is allowed to be made. And almost 100% of the time, it’s made of three grapes: Chardonnay, Pinot Noir, and Pinot Meunier. (Phew, one less confusing wine factoid to worry about!)

The Fontaine estate that produces this party in a bottle sits on a ridiculously bucolic hillside vineyard in the famously under-the-radar, Aube. Here, Salomé Fontaine and her husband carry on her family’s centuries-old tradition of handcrafting small batches of exquisite (and affordable) Champagne.
