On a ridiculously bucolic hillside vineyard in the famously under-the-radar, Aube, Salomé Fontaine and her husband carry on her family’s centuries-old tradition of handcrafting small batches of exquisite (and affordable for the price) Champagne. This 100% Pinot Noir is a millésime wine (a Champagne or sparkling wine produced with grapes from the same vintage year for at least 85% of the bottle), the vintners ensured their harvest truly reflected their vision for the bottle. What you’ll find is a sparkler that’s got miles of white fruits, that’s weighty but elegant in its simplicity of its house’s expression.

This wine is a fantastic dessert accompaniment, but for the main meal give some sushi a whirl.
