A couple of New Zealand winemakers decided one day to make wines together that they normally wouldn’t have the opportunity to make at their day jobs. They named their surreptitious project Vandal as they have to keep their prominent identities hidden, and you get to taste the results of their hard work — and unconventional style — in every single bottle. This unfiltered white really showcases a different side of New Zealand Sauvignon Blanc as it’s sourced from older vines in the sub-regions of the Southern Valley and it is co-fermented with oysters. Yes, you read that right. Oysters. This fascinating wine is fruity and earthy and fascinating and has that umami thing going for it. If you’re a Sauv lover, we implore you to give it a s(whirl).

 Any shellfish is a match for this fascinating Sauv, but Shrimp Scampi are a real banger.
