Prosecco, Champagne, Cava... let's get beyond these 3 mainstay categories of sparkling wine. These tiny little opulent bubbles hail from an idyllic Italian village outside Venice, Italy featuring insanely beautiful rolling hills of vineyards. This bottle breaks the mold and doesn't fit any of the classic sparkling wine categories. Paolo, the winemaker behind this bottle, would probably pop up as an example of the quintessential Italian winemaker on any Google search (well there are a lot of Paolos in Italia!). He makes bubbles via the Charmat method AKA Metodo Italiano AKA the Italian method, which traps bubbles in wine via carbonation in large steel tanks. The results are fit for a Venetian prince or princess during the Renaissance with bright fruit, freshness and a rich finish.
