On a ridiculously bucolic hillside vineyard in the famously under-the-radar, Aube, Salomé Fontaine and her husband carry on her family’s centuries-old tradition of handcrafting small batches of exquisite (and affordable) Champagne. This 50% Pinot Noir/ 50% Pinot Meunier rosé Champagne is different than the multitudes of light and fruity wines out there because it’s got some seriously meaty undertones. Our heroic vintners were able to harness the region’s Jurassic-era soils and the saignée method to produce an earthier, fuller yet balanced wine that will have you rethinking what the sparkly pink stuff can do.
