This bottle right here is why we do what we do at WA. Take the grape, Cinsault. You’ve likely never heard of it because it’s just a bit character in the big opera performance that is a Rhône blend. But take this drought-resistant varietal that grows best in dry climates, like a vineyard nestled in the mountain shadows of Paardeberg Mountain in Paarl, South Africa — and now that Cinsault becomes the star of its own show. Known locally as Hermitage, this red is punchy and as floral as it is fruity. Served best with a bit of a chill.
