The one grape that’s easy to grow and not particularly fussy about where it grows is Cabernet Sauvignon, and this is the reason Cab is grown the world over. In Bordeaux, this varietal is near sacrosanct and is the base in many of France’s best bottles. Leading up to the ‘70s, Cali gave the grape a New World makeover and the world took notice. These days, many ambitious producers have been trying to equal Bordeaux’s best, like Argentina, where this 100% Cab was grown. Like New World styles, it puts fruit front and center; but because of the Mendoza terroir, you’re going to get some oak and vanilla — a taste as Argentinian as steak cooked over an open ember flame, extremely well-done.
